
Last week was a bit rough. All the things I had planned in my mind never worked. We dealt with illnesses last week, and spicy foods aren’t welcome when tummies are rumbly. So, I spent Sunday cleaning, laundering, and preparing for another week. It’s a welcome change to feel good about the week ahead. However, God’s word reminds me that “many are the plans in the mind of a man [or woman as the case may be], but it is the purpose of the LORD that will stand” (Proverbs 19:21, ESV). So, I’ll say Lord willing this plan will work this week.
Monday
Tacos with all the fixin’s and beans. Since we love Mexican food, we have our own nick-names we made up for when we either “make a run for the border” or I make a Mexican dish here. I thought you might get a chuckle from them. Karl becomes “Taco Man.” I turn into “Fajita Girl.” Hannah’s alter ego is “The Chimalupa Chick.” Benjamin, of course, is “Burrito Boy.” Noah likes to be called “Enchilada Kid.” And, finally, Abbey is our little “Sopapia Sweetie Pie.” Tomorrow night should be fun!
Tuesday
Chicken Casserole, rice, and broccoli
Wednesday
Beef tips and rice, salad, steamed carrots
Thursday
Turkey breast, wild rice, green bean bundles
Friday
Hamburgers, apple wedges, and chips
Hmmm…got a lot of rice on here this week. I must have had a hankerin‘ for rice when I wrote this. Good thing there are so many different flavors out there!
